Cooked out meat or barbecue
is the first dish people learned to prepare. Since that immemorial time
many tasty barbecue recipes appeared.
One of the most impressive barbecue food is Cuban pork shoulder with
pineapple mango mojo. You will need a pork shoulder of 4-6 lbs, ? cup
of olive oil, lime juice (1 each), 2 tablespoons of salt and pepper and
such spices as chopped cilantro (1 cup), minced jalapeno (3 each),
minced garlic (? cup), ground cumin (? cup) and 2 tablespoons of minced
ginger. First the barbecue
grill
and the oven have to be preheated to not less than 325 degrees. All the
ingredients except pork are place in a bowl and stirred to a paste. As
to the pork, it is placed on grill and cooked for 45 minutes, being
often turned. Then remove it from the barbecue grill, place in a
roasting pan, flavor with herb paste and again place in oven. After 2
hours it is placed in paper grocery bag with sealed end. The meat is
removed from the bag only after 1 hour.
The best barbecue appetizer for the pork shoulder is mojo. You will
need a small dice of yellow onions (2 each), diced mango (2 cups),
oranges juice and zest (2 each), limes juice and zest (3 each), a small
dice of fresh pineapple (4 cups), parsley fine chop (1 cup) and spices:
minced garlic (? cup), cilantro fine chop (1 cup), 2 tablespoons of red
chili flakes, a small dice of red bell pepper (1 each). Salt and pepper
– to taste. Onions have to be caramelized in a saute pan and
placed in a mixing bowl. After that add the rest ingredients
and
stir them properly.
Barbecue sauce-lovers know that the best sauces are homemade. Here a

The ingredients are: 2 tablespoons of Worchester sauce, 1 stick of oleo
or butter, 1/4 cup of vinegar, 2/3 cup of catsup, 1 finely chopped
onion, 2 minced cloves of garlic, 1/3 cup of water, 6 to 7 swipes of
lemon zest, 1/4 cup of brown sugar or molasses, 2 tablespoons
of
liquid smoke, 2 tablespoons mustard, 1 finely chopped bell pepper,
1-1/2 teaspoon salt, and mince jalapeno as an option. All the
ingredients are mixed in a 2 quart saucepan. Then simmer them during
45-60 minutes stirring slowly. After that the mixture has to be
bottled, cooled and placed in the refrigerator. This homemade sauce
will be the best seasoning for barbecue.
