There is an old saying – “all people are divided
into those who
eat meat and those who eat fish”. While meat-eaters barbecue
fat
pork and cholesterol-rich chicken legs, fish-eaters enjoy delicious
healthy salmon and flounder. Among barbecue recipes
there is a great variety of fish dishes for the staunchest gourmets.
First one should note some barbecue fish cooking tips. Salmon, tuna and
other firm sorts of fish are barbecued directly on the grill, but such
delicate fish as catfish, shellfish, perch or snapper need a wire
basket. Thin fillets of flounder and sole should be wrapped in the
aluminum foil to prevent the direct contact with fire. Prepared fish is
opaque. To achieve this effect one has to insert a sharp barbecue knife
between the fish layers and turn it – very carefully
– in
order to see whether it is ready. If the fish still has a diaphanous
color, it should be cooked several minutes more until it gets the
appetizing opaque tint. Another important point is to turn the fish
only once otherwise it will break up. And finally, remember: fish gets
cooked very soon on the grill, so keep an eye on it.
There are many barbecue fish recipes, one of the most delicious is Blue
Fish on Barbecue. You will need 2 cleaned blue fish of at least 2 lbs,
1 lbs of chopped tomatoes, 6 ounces of white wine, 4 tablespoons of
olive oil, 2 tablespoons of fresh lemon juice, 1 tablespoon of black
pepper, 1 tablespoon of marjoram spice, 1 tablespoon of garlic powder
and 2 tablespoons of salt. Remove skin from the tomatoes. They are
easily peeled after they are first placed in boiling water for about 30
seconds or more and then in cold water for two minutes. Take an
elongated pan with at least 2 inch sides and shape double layer
aluminum foil on its bottom. Then place fish and all the ingredients.
Cover fish with foil and adjust barbecue

heat so that it is low. Cook within 30 minutes. This dish is prepared
on barbecue gas grill. If you use charcoal grill, you should place fish
on the grill only if the coals are white and cook during 25-30 minutes.
Barbecue fish is done when fork inserts easily in it.
